Louie's Cafe for Kids - the Chocolate Chip Pancakes from LSU!

chocolate Chip pancakes!
LuLu loves LSU and Tiger Paw Pancakes
Charly likes licking the jelly out of the containers!
Chocolate Chip Pancakes at Louie's Cafe.  I've always known Louie's Cafe as the great late night spot at LSU -- open 24 hours a day, 7 days a week, which is most perfect for those who crawl out of the bar at 2 a.m. and need something to eat before attempting (ah hem) to get into a car and drive home.

Note to the nostalgic:  Louie's is also a great place for those former student/aholics to bring their children!  Want to do something different with the kids?  Need someone else to cook breakfast for dinner?  Louie's Cafe on State Street, just a block from the campus, is perfect and -- well, can I say, inexpensive?, as an alternative.

Chocolate chip pancakes in any shape you choose, or round banana filled pancakes for the kid in all of us, take your pick.    When the kids get a little crazy from their sugar rush they can take a twirl on the soda shop stools at the counter...and finish coloring between the lines on their very own Louie's Cafe coloring pages.     Just try to keep the little ones away from the big kids who may be snoozing off a hangover at the next tables and are, therefore, a little grouchy.  It's an interesting twist to the classic late night scene on State Street in Baton Rouge.

How to Boil Crawfish

It's easy!  Just  8 steps...

After the boil -- with corn and potatoes,
 tossed over newspaper table cloth

1.  Select Louisiana crawfish.

2.  In a pot separate from your boiling pot, submerge the LIVE crawfish in salted water for at least ten minutes.

3.  Fill your boiling pot with water and season with your favorite crawfish boil seasonings.

4.  Bring the water to a boil.

5.  Add crawfish.

6.  When the water returns to a boil, cook the crawfish for 12 minutes.

7.  Take the crawfish off the fire and allow to soak for another 10 minutes.  (Don't soak too long, the crawfish get salty.)

8. Serve with beer and friends.

Note:  don't eat the crawfish with straight tails...they were dead before they hit the water, and could make you sick.

Crawfish Prices Louisiana 2013

crawfish Prices sign in Port Vincent Louisiana
You are just ready for that next batch of hot, boiled crawfish, aren't you?   Well, of course you are!  It's Good Friday in Louisiana and boiled crawfish is a must-have today, tomorrow or very very soon.

I usually recommend Sammy's Grill in Baton Rouge, but if you are in the mood for home boiled, you can get it this week for about $2.99 a pound.

The best buy is about about two pounds per person.  If you don't want to deal with the boiling, you can get them hot and boiled for $3.79 per pound at this roadside Crawfish stop, on highway 16 in downtown Port Vincent, Louisiana.

This stand is just a 10th of a mile east from a cemetery surrounded by a white picket fence...final resting place of the famous Cajun cook Justin Wilson.    See if you can find it, and post a pic here!
